Food Fixing Friday

Today I am linking up with Kelly from Two kids,a minivan and a lot of love for Food Fixing Friday. I am always up for finding new recipes for my family so I'm excited about this. Hopefully all of you will see it and post your favorite also on a weekly basis so we can all expand our recipe books :)

Todays category is breads...I had to think about this one...the first one that came to mind was my grandmothers sourdough bread but that was a little complicated and involved starter and feeding it and all that so I thought I would wait for another day to share that one. Another recipe that I got from her though is Applesauce Muffins(after all those are a type of bread,right? Okay well today they are) I absolutely love this recipe...it makes a ton of muffins and once you mix the batter up you can put any leftover batter in the fridge for up to 4 weeks!!!! I usually make an entire batch and sometimes even double it then keep it in the fridge and just pull out in the mornings and throw them in the oven. My kids love love love these muffins!

I wish I had a picture of them but I don't. I'll have to plan ahead next week and try to have a picture ready.

Applesauce Muffins

2 sticks;softened margarine or butter
2 cups sugar
2 cups applesauce
2 eggs
4 cups plain flour
1 tsp vanilla
3 tsp cinnamon
2 tsp baking soda
2 tsp allspice
1 tsp ground cloves

Mix all ingredients. Bake in muffin tins at 400 degrees for 15-20 minutes.

One batch yields 3 dozen muffins and they are unbelievably moist!!!!!
